Molecular formula C5H12O5, melting point 92-96℃,
appearance white crystal granule or powder, with
sweet taste equivalent to sucrose, sugariness
105%-120%. The product can be easily dissolved
in water (160g/100ml), slightly soluble in ethanol
and methanol, boiling point 216℃, caloric power 16.72kj/g (equal to sucrose). It can absorb heat when dissolved in water, with moisture absorbing function, and transient diarrhea can be induced when excessively taken. The product can also treat constipation. GB13509-2005 quality standard should be implemented for xylitol in food industry, and standard specified in China Pharmacopeia should be executed when xylitol is applied as medicine.
